Tuesday’s Dinner


After my bike ride, we went to the kitchen to make dinner. We THOUGHT we were making bratwursts. Have way through the cooking process I realized we had no hot dog buns.

So…..we made what Michael calls a “White Trash Casserole.” I grabbed a box of our Annie’s Organic Mac and Cheese and Michael made a rue for the sauce.

I steamed a mixture of cauliflower and broccoli and put some Goddess Dressing on top. Michael mixed the sliced brats into the Mac and Cheese and dinner was served!

The box states it makes about 2 servings but we made it into three servings and saved the leftovers for lunch one day this week.

Dinner was delicious! The bratwursts were 260 calories each. The Mac and Cheese was 280 calories a serving (plus a little extra for the rue he made). The veggies were barely any calories but I added them into MyFitnessPal as 100 calories. The Goddess Dressing is 120 calories a serving.

Delish!

QUESTION: Are you creative when it comes to cooking? Or do you follow a recipe at all times?
