Mushy Dinner and Top Chef

After the dog park, I went home and Michael made me dinner. He made me ravioli for dinner because it was soft and I could eat it.

Since I haven’t been able to eat much, I was starving. My stomach felt hollow and grumbly. Michael made the ravioli and put pesto on it. I ate the 1 serving and was still so hungry. He made me a second serving. I was okay for calories so I wasn’t too worried.

It was tasty and I was able to eat them.

While I ate my ravioli, we watched last night’s Top Chef episode. Anyone else see it? I don’t want to ruin it for anyone…

Last week was a bit of a controversial episode. One of the contestants, Alex, allegedly stole another contestant’s pea puree! I was so shocked. I’ve never liked Alex on the show and that sealed the deal for me. Not only did the editing imply that Alex stole the puree, he WON that week’s competition. With the pea puree.

Last night’s episode was about ethnic cuisine. The “Quick Challenge” was cool. The chefs had to create Ethiopian dishes. I happen to love Ethiopian food, so that was a cool challenge. I won’t talk about the rest of the episode in case I spoil it for other people!

Low Key Dinner

I felt sucked of all energy yesterday. By the time I got home from work, I didn’t want to spend a lot of time on cooking. First, I made a salad using the fresh greens from our friends.

Fresh Greens

I used green and red leaf lettuce and spinach. I realized the leftover chickpeas I wanted to use were bad. 😦 Tossed those! The salad entailed:




-Blue Cheese

-Orange Peppers

-Sliced black olives

-Fresh pepper and oil and balsamic vinegar

The salad was good. I also cooked some spinach ravioli from Costco and topped it with pesto. It may look ugly, but it’s delicious!

While I was making dinner, the skies seemed to explode. There was an intense downpour, thunder, and hail! Fat Kitty was fascinated by the hail.


We watched this week’s episode of “Lost,” “The Middle” and “Modern Family.” I was so exhausted, I don’t even remember falling asleep!

I’ve been doing the Foam Roller every night and I did it this morning too. I can’t remember the last time I was this sore from a run! I so don’t understand it. And using the Foam Roller on my IT Band is brutal.

I don’t know what is in store for me this weekend. It’s the first weekend in months that we weren’t training for Reach the Beach. I suppose I have a touch of the “After Race Blues.”

QUESTION: Where you live are you actually experiencing spring weather? Or is it crazy weather like it is in the Northwest?

UFC 112 Dinner

Saturday wasn’t very exciting after our bike ride. I did some reading, ran errands, went grocery shopping, watched part of Mad Men Season 2, and cleaned the house. I had some leftover pizza from Friday night for lunch and it wasn’t very filling. 😦 I was hungry by 3:30 so I made myself a salad.


A little lettuce, black olives, broccoli, carrots, chickpeas (my new favorite thing!) and Light Ranch Dressing. It was so good! I wish I could eat that all the time. I absolutely love salad.

For dinner we made grilled asparagus -grilled in Grape-seed Oil (topped with freshly shredded Parmesan cheese), and bratwursts!

Michael was so hungry he had 2 brats! I was hungry too. The asparagus was amazing.

We wanted something quick and easy so we could watch the UFC 112 show. Michael is a huge fan and I’m slowly becoming a casual fan. What I love most is the training the MMA fighters go through. It’s immensely inspiring! Michael knows that this aspect of it is what interests me most so he’ll record “hype shows” that show them working out. One guy, Sean Sherk, has a video on Youtube detailing his workout. Check out this intense workout! http://www.youtube.com/watch?v=1G61d0feaIg. There’s also a video showing him running up the side of a mountain but I couldn’t find that one.

Sunday’s Dinner

Dinner last night was exceptionally good! I scored some yummy ravioli from Costco (Spinach and Cheese). Ravioli is one of my favorite dinners because it’s yummy and so easy to do. This is crucial since I really dislike cooking. 🙂 We topped the ravioli with a little bit of olive oil, freshly ground pepper and Parmesan cheese.

Dinner Salad consisted of:
Bagged salad and baby spinach mix
Raw cauliflower
Chopped baby carrots
Robusto Italian dressing–this was a new purchase and I really enjoyed it. Michael liked it as well but said he wouldn’t be eating it because it contained soy.

Apparently, soy is bad for men! I had no idea. Men who eat soy products have significantly lower testosterone levels than men who don’t. Not good! Soy is OK for women to eat, however, because our bodies do need the estrogen boost. Here is a very interesting article about soy: http://www.healthyfellow.com/310/soy-guide-for-men/

For dessert, I had one Girl Scout cookie (Samoas).

Calories for dinner: about 500.
Calories for dessert: 75.

Costco is a great place to get things that you eat a lot. But it’s also a place where you can easily overeat…The raviolis were HUMONGOUS and there are 9 servings in that package. Pay attention to serving sizes when you eat. It’s easy to eat more than one serving if you’re not paying attention.

Today is supposed to be sunny in Portland. I’m trying to decide if I should run at lunch. We’ll see how I feel in a few hours. And I’m not sore from yesterday’s bike ride! Progress!

Sunday was a good food day for me. I will be weighing myself and measuring next week. Really not looking forward to that…
