Dinner last night was pretty darn fantastic…I have no idea if it was because we were both starving after the bike ride but everything tasted wonderful. First, a beer:
I only had one. We made turkey burgers and instead of fries, we had asparagus as the side. They were perfect! A little pepper and shredded Parmesan cheese and it’s the perfect addition to pretty much any meal.
On the turkey burgers we melted slices of Swiss cheese and topped it with avocado. It was slimy and hard to eat but it was a delicious addition to the burgers. I sliced some tomato and added that too. (Very messy!)
For Sunday’s lunch I made a “salad” with the Red Inca Quinoa leftovers, steamed broccoli and steamed carrots, chickpeas and Goddess Dressing. It was very filling and what I love most about Quinoa is that it goes with everything. Salads are my favorite quick meal.
For a sweet treat, I also ate an entire package of raspberries. 🙂 I couldn’t resist. I love raspberries and once I started eating them I couldn’t stop!
