Lunch for One


Michael went golfing this morning with his friend so when I got home from the pool, I made myself lunch. I steamed cauliflower and some baby carrots and topped them with Trader Joe’s Goddess Dressing. I also made Chicken Shu Mai. It’s my favorite Trader Joe’s find. It’s in the frozen section.

They are super yummy and very low in calories! A serving size is 6 pieces for only 160 calories! The way I used to eat them was with some soy sauce and brown rice. I skipped the brown rice today.

I also had some hot sauce with the Shu Mai. Beware! It’s VERY spicy if you’ve never tried it before.

Looks messy, but it was delicioius.

The rest of today is going to be restful for me. Yesterday’s ride wore me out!

QUESTION: If you’re in a relationship, who does most of the cooking? What do you eat when you’re on your own?

  2. I live with my fiance and I do 98 percent of the cooking. I just prefer to be in control of it. 🙂

  6. I cook my own meals. Jeff will sometimes make his own, sometimes I make his and the kids and then make a different one for me. I am so picky that it just works out better that way. Most people think it’s weird, but it has always worked for us.

  7. I LOVE that hot chili sauce! SO good!

    I do the cooking in the relationship–and I eat more veggies, simple meals when I’m on my own.
